trying to get motivated for dinner...

where's your favourite place to look for dinner ideas?  especially if you have a thermomix?

even though I don't hang out there so much now, i still head straight for forum thermomix every time I want thermomix recipes :D

not sure if it's because i'm a creature of habit or it's just the best place to look! i love all the blogs and other sites around now but i just can't be bothered to look in a heap of different places. i will quite often google if i'm not sure where i might find a recipe, and often end up on a blog or on taste.com.au, but if i know i'll find a thermomix recipe there, i go straight there :)

so tonight i've got chicken and i'm thinking about..............

Honey Soy Chicken?

Salt and Pepper Chicken with a Thai Dipping Sauce? (could i make this without frying do you think?)

or maybe Chicken Moolie...

Finally got around to making this when i was out of avocado for my bagel - mmmm yum! Rora wasn't keen (it's also gluten free) but i really enjoyed it!!!

Flourless apple & lemon cake (GF, TMX)

well, this is not a recipe (yet) as i didn't measure anything when i made it! next time i will write it up i promise!

however i just wanted to report in that I made this after a facebook friend gave me the link, and it was delish!!!!!

i reduced the amount of sugar to 2/3 cup (could possibly reduce to 1/2 cup) and used 2 apples.

basically i ground the chickpeas and added all the ingredients except the apples and mixed on speed 8 until smooth. then added the apples and chopped them on speed 5-6 until i couldn't hear any more big chunks in there.

YUM!

Pancakes for Breakie (GF)


I didn't convert this to tmx as I wanted to test them first and make sure they were as yum as they looked! They were pretty good, a little eggy, geoff thought. I was bored of our usual buckwheat pancake recipe and wanted to try something different. I wish I had some fruit left to put in them! (must go shopping...)

Happy Boxing Day!!

I've decided to set myself a challenge to blog every day for a month :D i figure dh will be home for most of that time so I will have a little more to myself and have no excuse ;) At least once he gets over the gastro Ryan shared with him for Christmas Day i will LOL

I just had this link come through on my blog reader and had to share it - for a gluten free gingerbread house. Not something i'd have the patience for but looks great! Speaking of gluten free lollies (sweets / candy) what ones do you know of / use and where do you buy them? Here's a list of gluten free lollies we know of / buy (NOTE: please always be sure to double check labels in case these products are no longer GF):
  • the We Love Coles brand of smarties - in individual packs. From Coles obviously ;p
  • Mr Mallow marshmallows, available in places like the reject shop and Toys R Us
  • Natural Confectionary Company - check ingredients but about 4 of the fruit flavoured jellies are GF
  • Jelly Belly jellybeans (mmmm)
  • Minties
  • some (most?) lifesavers
  • most flavours of Chupachups (this is tricky as it's hard to read the label on individual ones - check on the mixed packets)
Chocolate:
  • some Cadbury - the plain, and Snack are definitely
  • some toblerone - the fruit and nut is - the regular one with nougat is NOT
  • most cheap chocolate is

I'm having a total mind blank as to more!!! I will update as more come to mind :)

I know that I find the best places to buy GF lollies are the $2 shops - the Reject Shop, GoLo etc :) and also a lot of the homebrand lollies, especially in IGA

Where can I Find More Thermomix Recipes?

UPDATE 17/2/13 I won't be updating this page at all now, there are just too many blogs out there these days. it's great in most ways but does make me nostalgic for the days when mine was one of few. seems everyone's on the buy a thermomix and blog about it wagon these days!

Shortbread (TMX)


time to start making some goodies for christmas gifts...

step one was to try this shortbread recipe. posted on Forum Thermomix by CarolineW, it originally came from lobstersquad (though i can't work out how to go back to her older posts to find it there). oh, silly me, caroline already had posted the link

300g flour
100g sugar
200g butter (cold)
pinch salt

Preparation: Put flour into TM bowl first, add everything else on top, including any extra flavourings you want to use, eg lemon rind, pecans, etc. Blitz for 20 seconds on speed 6. Turn out crumbs and either press into a cake tin (loose bottomed or lined so can get it out again) or wrap in cling film and leave to rest in fridge for 30 minutes, after which you can cautiously roll it out and cut simple shapes.

Bake for 20 mins at 170 degrees C, until pale gold colour. DO NOT TRY TO TAKE OUT OF TIN until it's cooled for at least 10 mins. I say this from bitter experience! After that you can carefully transfer it to a cooling rack.

brazen's notes: i added macadamias but next time i will add them at the end on reverse as they just became powder and didn't add a lot of taste or any texture.
I will also try ann's idea of replacing 50g of flour with rice flour (which you can make in the tmx of course) as i always preferred shortbreads with rice flour in them.
when you line your tin i suggest leaving overhanging ends to make it easier to get out of the tin, and leaving it in the tin til it's cold! otherwise it is very hard to get out!

it's been very popular in my house with everyone except ryan (who loves bought shortbread biccies but won't even touch it to taste lol). think it will look lovely in cellophane with ribbon tied on it.
