Buttermilk Buckwheat Blueberry Pancakes (GF, TMX)

Following Martha Stewart's recipe from Smitten Kitchen, i just subbed in some gluten free alternatives and geoff and i agreed they were better than the "real" thing! yum! i'm the only one who has the berries so feel free to skip those if you like. we have ours with a little maple syrup and on christmas day we'll have bacon too (i love the salty and sweet combo). they'd be nice with the thermomix nutella spread too!

you could easily do this with a food processor or by hand if you don't have a thermomix.


Buttermilk Buckwheat Blueberry Pancakes
gluten free

enough for 4

1 cup (150g) gluten free plain flour (White Wings brand)
1 cup (150g) Buckwheat flour (Lowan brand)
2 teaspoons gluten free baking powder (i didn't have any GF so skipped this)
1 teaspoon bicarb soda
good sprinkle vegetable salt (we use Herbamare)
2 tablespoons (15g) sugar
2 large eggs
600ml (640g) buttermilk
3-4 tablespoons (20g) unsalted butter, melted in the fry pan you're going to cook the pancakes

1 cup or punnet blueberries, fresh or frozen and thawed (optional)

1. Place all ingredients except the blueberries in the thermomix. Mix on speed 6 for 10 seconds. scrape down sides and mix on speed 6 for another 10-20 seconds. Leave to rest for 20 minutes.

2. Heat your pan on a medium heat and grease as needed (i just use cooking spray to regrease between pancakes). pour in around 1/4 - 1/3 cup of batter. If you are having blueberries drop some on top - i usually like to push them down a bit so they sit 'in' the pancake rather than on top of it.

3. when the pancake has bubbled and looks slightly set it's time to flip it over gently. it will only take minutes to brown on the bottom.

4. serve with a drizzle of maple syrup. these would probably be nice with the thermomix strawberry sauce too :)

Thermomix Report - Buttermilk Bread


tonight i was too lazy to cook and geoff has hurt his back so unable. we had a little leftover spag bol (bought *blush* we have pizza but the kids prefer the spag) that the kids wanted so i raided the freezer.

talking about food waste... i have a shameful confession. i have 2 freezer full of food but i have no idea what 90% of it is as i never remember to label it *bigger blush* so tonight i found one that i thought looked like chicken cacciatore and sure enough it was (phew!)

it was sooooo good, the chicken was so tender but not overdone.

anyway, to go with it i decided to try the buttermilk bread in the TMX. less than 3 minutes and the dough was done. i set the timer for it to rise for 30 mins but with my ears (infected and having trouble hearing) i missed the timer lol no idea how long it rose but it didn't need long to double in size after i kneaded it down and shaped it LOL (long enough for us to walk to the field across teh road and for me to be licked by a cow, and then by a bull and then warned by the bull to GET OUT NOW!!! we walked quite quickly to the gate, listening to him bellow all the way! yikes!)

it also cooked MUCH quicker than the book said (in about 20 minutes)

it was quite nice! fluffier than the TM31 bread, similar to the foccacia but less oil and a bit crunchier outside. will definitely make it again :)

YUM! sunday cooking


had to duck to lincraft to get a zipper for emelia's princess dress which is my main project this weekend, so i didn't get home til noon. finally cooked up those two caulis into soup which the kids have devoured - it is soooo good!

slight variation on the usual due to lack of ingredients and time:

onion, stock powder and water, about 1-2 garlic cloves crushed, 2 whole caulis cut into florets (large), 1 apple - cook til falling apart
add in some chive cream cheese and buttermilk and blend

serve with homemade garlic bread - yum~


we are also making jam drops as i bought a packet of raspberry tartlets the other day and ryan was addicted but no way i'm buying them all the time. used this recipe but had to add quite a bit more flour (but forgot to weigh it).

Buttermilk Pancakes with Ricotta Cream

Demon Deeva did a post about buttermilk last night and is going to make my Spiced Prune Buttermilk Loaf but using dates and Figs which sounds yummo to me! anyway, i now post this recipe in her honour :-D


Serves 4, 7.2g fat per serve

1 cup (150g) self raising flour
1/2 tspn ground cinnamon
1 tab caster (fine) sugar
2 eggs, beaten lightly
1 cup (250ml) buttermilk
125g reduced fat smooth ricotta cheese (buy fresh, not in the container)
1/2 cup (125ml) maple syrup
1 medium lemon, cut into wedges

* sift flour, cinnamon and sugar into a medium bowl. whisk in the combined eggs and buttermilk gradually until smooth. Cover and stand for 30 minutes.

* pour 1/4 cup (60ml) of the batter into a heated oiled non-stick pan and cook til bubbles start to appear. turn the pancake and cook until browned underneath. remove the pancakes from the pan and cover to keep warm. repeat with the remaining batter to make eight pancakes.

* combine the ricotta with one tablespoon of the maple syrup in a small bowl.

* serve the pancakes with the ricotta mixture, remaining maple syrup and the lemon wedges.

OPERATION BUTTERMILK

this afternoon's assignment (much as i'd prefer to be sleeping - child-free) is to use up the carton of buttermilk i bought which is out of date tomorrow. i bought it planning to make pancakes (but never got around to it) and a marinade for chicken (but we have no meat left).

anyway, this is what i'm going to try:
black devil's food cake
spiced prune buttermilk loaf

i've also got to cook the cabbage to go with the beef casserole for dinner tonight (i love my cabbage slow cooked with a little butter, until it's soft and sweet - YUM!)

will report back on the recipes some time later...

REPORT
well the devil's food cake is ok. the kids seem to like it, not really my style (i prefer 'real chocolate' cakes like my mudcake). i must remember it's eggfree though for those days when i have no eggs in the house!

the prune loaf has only just gone in the oven but the batter is delicious and being fought over as i type! lol
ETA - the prune loaf is DIVINE! definitely one i will make again more than once. so delicious and you'd never know they were prunes.
