Lime & Coconut Cookies (GF,TMX)


it's Thermomix competition time again! as usual i forgot to get any recipes into the comp *rolling eyes*

however i have just made the first recipe for the comp - the Lime & Coconut Cookies. If the dough is anything to go by these are fantastic!!! *drool*

here is my GF version of the recipe, thanks to Natalee for entering it :)


Lime and Coconut Cookies
Ingredients
Zest and juice 2 limes
170g raw sugar
120g cold butter
120g gluten free plain flour
60g gluten free SR flour
100g quinoa flakes
45g shredded coconut
1 egg
1 tsp vanilla extract
80-100g white chocolate

Method
Preheat oven to 180ºC.
Place zest into TM bowl and mill for 15 seconds on speed 8. Scrape down sides of bowl and repeat if necessary.
Add sugar and mill for 15-20 seconds on speed 8 - each time you hear the sugar get quiet scrape down and start again.
Add butter and blend for 10 seconds on speed 6.
Add remaining ingredients except for chocolate and mix a further 10 seconds on Reverse + speed 4.
Place heaped teaspoons of mix onto lined baking trays, flatten slightly and cook for 12-15 minutes until golden around edges.
Remove from oven and cool completely.
To prepare chocolate, place into clean dry TM bowl and mill for 5 seconds on speed 8. Scrape down and melt for 2½ minutes at 50ºC on speed 1. Scrape into Ziploc plastic bag, snip corner off to drizzle over lined up cookies.

Friands - from Carol

Coffee choc Friands
the ingredients

250g icing sugar
100g plain flour
125g ground almonds
180g butter, melted and cooled
6 egg whites, lightly beaten
2 tablespoons instant coffee granules, dissolved in 1 tablespoons hot water
100g dark chocolate, finely chopped


the fun
§ Preheat the oven to 180ºc
§ In a medium bowl, combine sugar, flour, almonds, butter & egg whites. Mix well until all ingredients are combined.
§ Pour dissolved coffee into mixture and mix well.
§ Spoon mixture into Flexibake Pan and top each friand with chopped chocolate.
§ Bake for 20 minutes or until cooked.
§ Remove from oven and let cool in Flexibake Pan

CHEF'S TIP
Gluten free flour can be used


Pistachio and Lime Friands

125g Pistachios
6 egg whites
185 g butter, melted
1 1/2 cup (75g) plain flour
1 tblspn lime juice
2 teaspoons finely grated lime rind

1 preheat oven to 200c/180 fan forces. Grease your tin

2. Process nuts until finely ground

3. Place egg whites in large bowl; whisk until frothy. Stir in butter, sifted sugar and flour, juice, rind, and ground pistachios. Spoon mixture into pans.

4. Bake friands aboutt 20 mins. Stand in pan 5 mins, turn, top side up onto wire rack to cool

and some more "New Ideas" - dips

and from another New Idea magazine

creamy tomato & bacon dip
fry 2 rashers bacon, finely chopped, until crisp. drain and add mccormick lemon, basil & thyme seasoning
put in bowl and add sour cream, finely chopped semi dried tomatoes, finely chopped gherkins and finely chopped basil.
refridgerate
serve with crudites

beetroot & hummus dip
mix hummus (damn, i didn't realise this used bought hommus), can of baby beets (drained), garlic, cumin and lemon juice in food processor
season and refridgerate
serve with asparagus spears, toasted naan bread wedges & slice sausages

corn & chilli dip
in food processor mix cream cheese and half a can corn (drained) til smooth
in bowl mix in remaining corn, sweet chilli sauce, lime zest, lime juice and a long red chilli, finely sliced. season and refridgerate
serve with lime wedges, rice crackers and grissini sticks
