Beef, Bacon & Beer Casserole (GF & SC - Slow Cooker)


1 onion, peeled and diced
2 large carrots, diced
6 medium red skinned potatoes, diced
10 slices chopped pancetta or 6 slices bacon, diced (a quick fry would be great if you can be bothered)
600g-1kg diced beef (i used lean but a stewing type would be even better)
2 tspns beef or vegie stock concentrate or 2 stock cubes (gluten free)
2-3 tabs gluten free worcestershire sauce (we use Spring Gully)
approx 3 tabs honey
1 bottle of gluten free beer (we used O'Brien's Premium Lager *)
2 tabs cornflour (i added this later but you could also toss the beef cubes in it before cooking)
optional:
2 handfuls green beans, cut into 1" pieces
thyme and / or garlic


I used a 3L slow cooker, but if you use more meat you will need a bigger cooker

Place ingredients into the bowl in the order listed above.

I tend to use Auto which cooks on high for 4 hours then switches to low and cook for the rest of the day

* Geoff said it was an OK beer, he wouldn't choose to drink it but if had to be GF he would be happy to drink it.

Quick & Easy Slow Cooker Spag Bol Sauce (GF)

My slow cooker is a 5L and this amount of spaghetti bolognaise sauce nearly filled it, so please adjust if yours is smaller. This amount made enough for 4 meals for the 5 of us.

1.5kg lean mince, broken up with a spoon as you put it in.
1-2 onions, chopped (i chopped everything in the thermomix on speed 5)
5-6 carrots & / or zucchinis, chopped finely
6-8 shortcut rashers bacon, chopped finely
around 1 cup red lentils
2 large jars of pasta sauce (I use the Aldi Organic one) or a bottle of passata / sugo
few spoonfuls of tomato paste, optional
splash of red wine - about 1/4 cup
herbs to taste (i don't need these with the pasta sauce but would use them with passata)
stock powder or stock concentrate to taste (i used 1 dessert spoon full of stock concentrate)

place it all in the slow cooker on high or auto. I checked on it for the first half hour before leaving, stirring it around a bit.
If you don't have auto turn down to low and cook for 6-10 hours.

serve with pasta, baked potatoes, in lasagne etc.

note: you definitely don't need any liquid other than the wine and pasta sauce!


And as to what I did with my thermomix yesterday... you're looking at it above! I work on Wednesday afternoons & evenings and spend the morning preparing, so I don't do any cooking other than sometimes preparing dinner for geoff to give the kids while I'm at work. I didn't even make my breakfast as I had the leftover GF bread with avocado on it!

Rough & Ready - Beef in Red Wine (GF, SC)

tonight's dinner - yum!

i used to actually have a recipe i used but it disappeared long ago and now i just chuck stuff in hehe

tonight's version went something like this:

about 1-2kg chuck steak / gravy beef etc, 2cm dice
2(?) tabs gluten free flour
1 tspn GF beef stock (we use massel)
little black pepper

toss the meat in the flour / stock / pepper mix and place in slow cooker

1 onion, finely chopped
4-6 rashers / shortcuts bacon, chopped
4-5 carrots, chopped
3-4 zucchinis, finely chopped, optional

I actually chopped all mine in the thermomix on speed 4 (i just have discovered speed 4 for chopping veg & am LOVING it lol). place on top of meat

thyme, around 1-2 tspns
garlic, chopped, optional (i think i missed this today lol)
red wine, around 1/2-3/4 cup (i just use a cheap one)

sprinkle thyme & garlic over, pour wine over

cook on auto for 6-8 hours (auto is high for 2-3 hours then low, and the cooker i used is a 3L one). i stir occasionally toward the end, once it starts smelling good.

we have ours with mash and steamed green beans.

Lamb Shanks in Plum, Cranberry & Red Wine Sauce (GF, SC/CP)

Based on the recipe on eb, but with a few major differences due to lack of ingredients lol the Lamb Shanks really ended up way too fatty for us despite being baked on a rack first, cooked the day before and all fat skimmed off tonight, so if anyone has any less fatty suggestions for a replacement please let me know :)

Special thanks to Lana who gave me the delicious plum sauce that saved me when i didn't have enough cranberry sauce! (we swapped for lemon butter & nectarine & peach jam ;))

Lamb Shanks in Plum, Cranberry & Red Wine Sauce

6 lamb shanks, fat trimmed as desired
2 tablespoons buckwheat flour
1 tablespoon chicken stock powder ( i use GF massel brand)
1 cup red wine (i just use an aldi cheapie)
1/2 jar cranberry sauce
around 2/3 cup plum sauce
1 tablespoon thyme or rosemary leaves
1/3 cup craisins (dried cranberries)
1-2 cups water as required
* check all ingredient lists to ensure they are gluten free

bake lamb shanks for about 20-30 mins in a 200+'c oven - i bake mine on a rack over a tray full of water, helps make them more tender as well as making cleanup easier!

place all other ingredients except water in slow cooker (crock pot) and mix well. add shanks and turn cooker onto high. cook for 2 hours then turn down to low. at this time take lid off and stir sauce to mix flour through. add as much water as you need (i had to add about 1 1/2 cups, i didn't seem to get much extra liquid from the shanks, probably because they were baked)

cook for about 5 hours until shanks are practically falling apart.

serve if desired or if you'd like to get rid of still more fat...

place shanks in a microwavable container and place in fridge. pour the sauce into a smaller container. the next night remove the solid fat from the top of the sauce. spoon it over the shanks and heat for about 20 minutes at half / medium / 50% power.

serve with mashed potatoes and steamed veg, including a green veg

Beef and Guiness Pie

just clearing out my crazy collection of recipe links and will be putting some recipes in here.
i'm pretty sure i made this last winter and it was delicious, taken from here. you can easily do the filling in the slow cooker (which i'm sure is what i did)

INGREDIENTS:
6 tbsp vegetable or sunflower oil
2 onions, halved and sliced
225g medium size chestnut or button mushrooms, cut into quarters
3 cloves garlic, finely chopped
1kg braising steak/chuck steak/stewing steak/casserole steak ( whatever you want to call it lol ), trimmed of fat and cut into 2.5cm chunks
5 tbsp plain flour seasoned with salt and freshly ground black pepper
500ml Guinness
2 bay leaves
2 sprigs fresh thyme
salt and freshly ground black pepper
500g puff pastry
1 egg, lightly beaten

( 6 strips of bacon is optional ---very tasty though , also optional is a third cup of sultanas )

PREPARATION:
1. Heat 2 tbsp of oil in a large, oven-proof casserole dish and gently fry the onion until soft, about 5 minutes. Add the mushrooms and garlic and cook for a further 5 minutes or until the mushrooms are soft. Remove the vegetables from the pan and place in a large bowl.

2. Place the seasoned flour in a bowl and toss the meat in it, a handful at a time. Heat a little more oil in the pan and fry the flour-coated chunks of meat over a medium-high heat until browned on all sides. Do this in batches, coating each new batch of meat in the flour and adding more oil to the pan when needed. Transfer the browned meat to the onion and mushroom bowl while you fry the rest.

3. When all the meat is browned, return everything to the casserole dish and pour over the Guinness. Add the bay leaves, thyme, salt and pepper and bring to the boil. Reduce the heat and simmer very gently, partially covered for 1� to 2 hours or until the meat is tender and the sauce slightly thickened. Alternatively, you can cook in a 170C/325F/gas mark 3 oven for the same amount of time. Check the liquid level occasionally to make sure it doesn�t become too dry, adding a little water if necessary.

4. When cooked, remove from the heat and tip the mixture into a wide baking dish, at least 5cm deep. Allow to cool to room temperature or store in the fridge.

5. Roll out the pastry and cut out 6 circles, each about 10cm in diameter, and lay them on the beef mixture so they overlap slightly. Brush with the beaten egg.

6. When ready to bake and serve, preheat the oven to 200C/400F/gas mark 6 and cook for 30 minutes or until the pastry is risen and golden and the pie heated through.

pumpkin & sweet potato soup

onion, peeled and chopped
olive oil (if desired, or skip the frying stage)
pumpkin, peeled and diced
sweet potato, peeled and diced
1 potato, peeled and diced
1 carrot, peeled and diced
chicken or vegetable stock
1 tin evaporated skim milk
fresh freen herbs

optional:
garlic,
curry powder
coconut cream

if desired fry off the onion (and garlic / curry powder)
add all other ingredients except evaporated milk & herbs
bring to the boil, reduce to a simmer
cook until all vegies are very soft
puree with a stick blender or mash.
add in evap milk. puree to mix well
serve sprinkled with fresh herbs, crusty bread on the side

NOTE: to make in the slow cooker simply place all ingredients into cooker and cook for 4-6 hours. puree in cooker.

Slow Cooker Chicken Casserole

1kg diced chicken breasts
1 tin crushed tomatoes
1 onion, finely diced
1 tablespoon yellow mustard seeds
3 tablespoons soy sauce
3 tablespoons sherry
3 tablespoons brown sugar
2 tablespoons tomato paste (optional)

Mix together all ingredients (except chicken).
Put chicken in slow cooker, then cover with sauce.
Cook on slow/low for 8 hours, or high for 6 hours.

this was originally one from the EB slow cooker book so i'm not sure who to give credit to! the version above is geoff's version which he made today, with a change to the quantity of chicken as 500g wasn't enough either for the sauce or for the family (let alone leftovers!)

i think it would also be nice with some sour cream mixed through.

Chicken Cacciatore


briefly so i don't forget what was in it (no quantities)

chicken
toss in flour, S&P
fry with onion & garlic
finely chopped carrot and zucchini (and larger diced capsicum which i forgot today)
white wine
stock
passata
diced tomatoes
olives - green and / or black
rosemary
bay leaves

slow cooker high 5-6 hours or low for longer
serve with chopped parsley and pasta (spirals)

Slow Cooker Roast, a beginners guide

one of the most common winter questions on eb is about cooking a roast in a slow cooker. it's SOOOO easy - and it's actually great for summer too, as the slow cooker puts out less heat into the kitchen than an oven!

anyway, here's a brief guide to doing a roast in your slow cooker:

  • in the bottom of your cooker put some quartered potatoes and / or halved onions and / or balls of foil

  • put the meat on top (make sure you remove all wrapping / any chicken guts etc first)

  • cook on whatever temp you need ie: if it'll be cooking all day long put it on low. if you wnat it quicker or it's frozen put it on high all day, or for 3-4 hours then turn down to low. you'll still need to remove the meat shortly before cooking to 'rest' it.

  • use the juices to make gravy (just add a little stock powder and flour and boil to thicken). of course i make my gravy in my thermomix now but i have done it on high in the SC before, or on the stove. if you have time it's preferable to cool the juices and remove as much fat as possible (i rarely get time to do this)

  • i do prefer beef and marinated whole chickens for the SC roast but lamb and pork are fine too, they just don't get that same roasting as you get in the oven ie: dry heat.

  • you can also put other vegies in around the roast - pumpkin, sweet potatoes, carrots and even your greens such as brussel sprouts etc, but you need to add them later or they will be overcooked.

  • you DON'T need to add water or any other liquid!!!! a splash of red wine is acceptable ;p you can also add any other seasonings you want eg: garlic and rosemary to lamb etc.

  • there is also a highly popular recipe floating around that involves a beef roast, a packet of french onion soup and a can of coke. i've tried it once and it wasn't my style but it is very popular so is probably worth trying!

Corn Chowder


as i posted a week or two ago my mum had a very quick easy and yummy recipe for corn chowder which i will probably use some time over winter for a work night dinner, but it does use mostly tinned ingredients. I wanted something similar but with mostly fresh ingredients. using the chowder recipes on taste for inspiration i came up with this recipe...

the amount i made will last us for 2-3 meals so it's a lot

olive oil
2 large onions, finely diced
6 slices shortcut bacon, finely diced
garlic to taste, chopped (i used a whole bulb as i have sick children)
around 1L water
5 chicken stock cubes
1 large carrot, diced
2 potatoes, diced
6-9 cobs of corn, de-husked, rinsed and kernels cut off the cob
about 1L low fat milk (you might need more, i'm not really sure. i used up the container of buttermilk as well)
cornflour to thicken (maybe about 6 tablespoons), mixed with small amount milk
can of creamed corn, optional
1/2 bunch spinach, chopped finely, optional
fresh lemon thyme
cayenne pepper, optional - only a small amount
black pepper, optional
fetta cheese, optional

heat oil, gently fry onion, bacon and garlic
add water and stock
add rest of the vegies
add milk and cornflour mix, stir well.
when carrot and potato is soft without being mushy add creamed corn, spinach, thyme and cayenne. let spinach wilt.
serve with cracked black pepper if desired and crumbled feta on top

would be nice served with fresh bread or damper :) YUM!

oh this would be easily done in the slow cooker, would probably take about 4-5 hours, maybe 6 depending on how small your diced vegies were.

Here's mine, except I usually used cooked chicken and cook it all day in a crock pot. I also tried to translate it from American to Aussie.

BODACIOUS CHILI.

1 kilo boneless beef chuck roast, cut into 1-inch cubes
2 large onions, chopped
1 large green capsicum, coarsely chopped
1 large sweet red capiscum, coarsely chopped
1 cup sliced fresh mushrooms
2 jalapeno peppers, seeded and chopped
4 cloves garlic, minced
3 tablespoons olive oil
2 tablespoons cocoa
2 tablespoons chili powder (mexican chili powder)
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon paprika
1 teaspoon ground turmeric
1/2 teaspoon salt
1/2 teaspoon ground cardamom
1/4 teaspoon pepper
1 tablespoon brown sugar
1/2 cup Burgundy or other dry red wine
2 410 gram cans whole tomatoes, undrained and chopped
1 410 gram can tomato puree
1 420 gram can kidney beans, drained
1 420 gram can chick-peas (garbanzo beans), drained
Spicy Sour Cream Topping
Shredded Cheddar cheese

• Cook first 7 ingredients in olive oil in a large Dutch oven over medium-high heat, stirring constantly, until meatbrowns. Drain and return meat mixture to Dutch oven.

• Stir in cocoa and next 13 ingredients.Bring mixture to a boil; cover, reduce heat, and simmer 1 ½ hours, stirring occasionally. Serve with Spicy Sour Cream Topping and shredded cheese

SPICY SOUR CREAM TOPPING

1 cup sour cream
1/3 cup salsa
2 tablespoons mayonnaise
1 teaspoon chili powder (mexican chili powder)
1/2 teaspoon onion powder
1/2 teaspoon curry powder (sweet curry powder)
Dash of ground red pepper
1 tablespoon lemon juice
1 teaspoon Dijon mustard

Combine all ingredients; cover and chill

Chilli Con Carne (and Senza Carne lol) - Slow Cooker

this is one of my favourite quick and easy to prepare slow cooker meals. for birthday parties (all our kids were born in months that are cooler for morning parties) i make this overnight and then serve it thicker as a dip with corn chips and sour cream. for dinner i serve it runnier with steamed rice and cheese on top.

it's very versatile as you can use all tinned products (as i do on work days) or fresh, if you have the time - and the products available!


500g lean beef mince (optional, if not used simply add 2-3 extra tins of beans etc)
1-2 onions, peeled and diced
2 cloves garlic, crushed
cumin, coriander, oregano, chilli / paprika / cayenne pepper / jalapeno peppers - approx 2 tabs of the first two, 1 tabs of oregano, and to taste for the last (i'm not even going to guess how much as i always end up with too much and ryan can't eat it lol)
a bit of cinnamon can be nice too.

fry til brown then place in slow cooker. (browning is optional, i prefer it but others don't worry)

place in slow cooker:
800 - 1600g (2-3 tins) of any combination of red kidney beans, 4 bean mix, cannelini beans and chick peas
maybe around 1200-1600g 3-4 tins of tomatoes (diced, crushed or whole). you can also use up any pasta sauce, sugo etc you might have stashed in the fridge.
chicken or beef stock - a few cubes / spoons of powder
vegies as desired including diced sweet potato, diced potato, diced capsicum of any colour, diced zucchini

when cooked serve with whatever you prefer of teh following:
sour cream
grated cheese
corn chips
white rice
fresh coriander
black olives
diced avocado
side salad

SANTA FE CHICKEN STEW

another from my paper stash - as yet untested

1 tbsp vege oil
1/2 cup diced onion
1/2 tspn garlic powder
1 pkg taco seasoning
1 x 28oz can diced tomatoes, undrained
1 x 15oz can pinto beans, drained
1 x 14oz can kernel corn, drained
1 x 4oz can diced green chillies, drained
1 cup chicken broth
1/2 tspn cornstarch
1 1/4 lb cooked, shredded chicken
sour cream (garnish)
shredded cheddar cheese (garnish)

  1. in dutch oven or large pot, heat oil. add onion and saute 2-3 mins
  2. add taco seasonings, tomatoes, beans, corn & chillis, mix well
  3. in small bowl gradually blend broth into cornstarch using a wire whisk, stir into stew
  4. stir in cooked chicken. bring to a boil, stirring frequently
  5. reduce heat to low, simmer uncovered 30 mins, stirring occasionally (simmer longer for thicker stew)
  6. garnish each serving with sour cream and cheddar cheese if desired.
here is the 'brazen-ification' of this recipe, this is what i will do when i make it.

SANTA FE CHICKEN STEW, brazen style (Thermomix)

1 onion, peeled & quartered
1 clove garlic, peeled
a little olive oil
taco spices - about 1 tbsp cumin, 1 tbpn ground coriander, 1 tspn cumin seeds, 1 tspn oregano, 1/2 tspn paprika
800g 0r 2x 400g can diced tomatoes, undrained
1 x 400g can mexi beans, undrained
1 x 400g can kernel corn, drained
jalapeno green chillies (to taste), drained &
diced
1 cup cold chicken stock
1/2 tspn cornflour
600g cooked, shredded chicken (that's about 1 double breast)
sour cream (garnish)
shredded cheddar cheese (garnish)

  1. chop onion and garlic for around 5-8 seconds on speed 6. add oil and taco seasonings, and cook 2-3 mins on temp 90, speed 1
  2. add chicken stock and cornflour and mix for approx 20 seconds on reverse speed 4 until blended
  3. add tomatoes, beans, corn & chillis, and cooked chicken. cook for 20 minutes on ??60-80, reverse speed 3-4 ???? (will need to test this)
  4. garnish each serving with sour cream and cheddar cheese if desired. would also be nice to serve with black olives, corn chips or cornbread
OR.... SLOW COOKER VERSION
I would also do this in the slow cooker. i would double if not triple the recipe. i would leave the chicken breasts whole and shred them after cooking. i would not put in teh chicken stock - i would use chicken stock powder and add maybe 1 cup of water, and then only add more if needed. it would probably need cooking for around 8 hours.

i will definitely have to try this one soon!

Indonesian Slow Cooker Chicken

tomorrow night's dinner (i will get it ready in the crock tonight)

Indonesian Slow Cooker Chicken with rice and an asian cabbage salad.

Indonesian Slow Cooker Chicken

Serves 4

4 skinless chicken breasts
2 tablespoon soy sauce
3 cloves garlic -- crushed
1 tablespoon grated fresh ginger root
2 teaspoon sesame oil
1/2 teaspoon cayenne pepper
1/4 cup peanut butter

~ In a small bowl, combine soy sauce, garlic, ginger, sesame oil and cayenne pepper.
~ Place chicken in the slow cooker.
~ Spoon sauce mixture over the top of the chicken.
~ Cover & cook on low heat setting for 6 hours or until chicken is tender & fully cooked.
~ Remove chicken from slow cooker and stir peanut butter into juices until smooth.
~ Spoon sauce over chicken to serve.

Serve with steamed or stir-fried veggies, and rice.

the asian salad recipe is again to use up the vegies in the fridge (it's not likely the kids will eat it lol) and will be a cross between the thermomix recipe and the changs asian noodle salad recipe. i'll use
red cabbage
wombuk (chinese cabbage)
shallots (that would be spring onions to you Dani ;p)
red onion
and maybe noodles

and a dressing of
sesame oil
sweet soy sauce
white vinegar

normally i would try to have some vegies that might tempt the kids but i really don't want leftovers! so i'd rather that they just have chicken and rice!
