Quick Chicken-Vegie Noodle Stirfry (GF)

mmmmm this was good and so easy! I'm working at a school atm and today we made something very similar in cooking class so I decided to use the inspiration for home :)

this will serve 6 probably

1 250g packet rice noodles (i wanted the fat flat ones but only had vermicelli)
oil of your choice, a few tabs
3 eggs, lightly beaten
1 onion, cut into wedges
2 cloves garlic, chopped
1" ginger, peeled and chopped
500g chicken breasts or thighs, minced (or chicken mince of course!)
vegies of your choice - i used a pack of baby corn, cut into strips, 1/2 wombuk, shredded, 1/2 bunch of broccoli cut into small pieces *
fresh mint and coriander to your taste, shredded or chopped
soy sauce, perhaps 1/4 cup? (to taste) gluten free if required
1/2 lemon or lime
sweet chilli sauce to serve (optional)

heat oil in wok. add eggs and swirl a few times to cook a thin omelette. remove from pan and when cooler roll up and shred. save.
add more oil if needed and cook onion, broccoli, garlic and ginger until just starting to turn translucent. add chicken and baby corn and cook over high heat, stirring until nearly cooked.
add remaining vegies and cook for 5 minutes until soft
add remaining ingredients - including squeezing juice over wok and shredded omelette - and mix well heating well, serve with sauce if desired

yum!

* you could also use any chinese greens, capsicum, carrot etc

Asian Noodle Salad - Gluten Free

since being a gluten free house we'd only eaten our old fave Asian Noodle Salad once - and it sucked :( it was really bleh. so I was very excited to have found a magic ingredient to make it so good again!!!

yay for changs for making GF fried noodles!

1/2 chinese cabbage (wom buk) or savoy cabbage, shredded finely
4-6 green onions / shallots - finely sliced
100g roasted slivered almonds or pinenuts (I used 1 whole packet)
1 pkt chang's gluten free fried rice noodles

dressing:
1/4 cup white vinegar
approximately 2-3 tablespoons agave nectar - you can get this in your supermarket's health food section, or a health food store (this is the magic ingredient btw!)
1 tab gluten free soy sauce
a few tbspns of sesame oil
around 2 tabs sesame seeds

combine all dressing ingredient and shake well
mix all ingredients except the noodles. add the noodles and mix well just before serving.

BBQ Pork Rice Paper Rolls (GF)

I just made these for dinner and they were sooooo delicious! i was shocked to find nothing left at the end of the meal! i wanted to record what i put on the pork so I didn't forget ;)

1 pork fillet
3-4 chopped garlic cloves
juice of half a lemon
ground black pepper
around 2 tabs fish sauce
1 tab brown sugar
around 1+ tspn five spice powder

mix all ingredients and marinade from 30 mins to overnight
BBQ fillet until cooked to your preference
let rest 5 minutes then slice

1/2 cup raw peanuts
1/2 bottle gluten free hoisin sauce (we used Ayams brand)
around 1 tspn sesame oil
rice paper
1/2 packet rice vermicelli
1 large cucumber, julienned
1 carrot, grated (optional, i don't like this but my family do)
shredded lettuce
fresh coriander
fresh vietnamese mint leaves
fresh mint leaves

dry fry the peanut over a medium heat. let cool then rub the skins off and chop coarsely
place in a small bowl, add hoisin sauce and sesame oil and mix well

dip 2 rice papers into a bowl of boiling water (obviously don't let small children do this part!)
place on a plate and top with small amounts of each filling inlcuding the sauce mix, fold the bottom side over, fold the ends in and then tightly roll up. eat :)

NB usually you woud have a dipping sauce with the rolls, but we find this the easiest way to eat them with children :)

video on how to roll ;)

Asian Soup with GF wontons (GF, TMX)

this is not so much a recipe as it is a reminder for me of what i did tonight :) it needs some refinement ;)

wontons:
500g veal mince (or use pork or mix of pork & veal, pork & prawn)
1 small onion
4 garlic cloves
2 small carrots
1" ginger
1 egg
2-3 shallots, cut into 1" lengths
coriander

chop on speed 6 & mix well

soak rice paper wrappers in hot water, fold four sides into the centre, put tspnful in centre and bring in as for wontons. place in base of varoma (don't line with baking paper or if you do poke holes in bottom - mine stewed in the collected steam :()

no need to wash out tmx bowl, any leftover mince adds flavour to broth

broth:
in basket place:
some celery leaves
1 small carrot, chopped diagonally
star anise (i used 3, was not enough)
4 garlic cloves
1" ginger sliced
black peppercorns if desired

in bowl of tmx place 800g water, splash of tamari and good splosh of sesame oil. i also added some chicken stock powder as i was out of homemade stock concentrate.

place basket in

cook for 10 minutes on varoma speed 3/4

asian veg:
use any leafy green veg, slice very finely and place in top of varoma

put varoma on top for 10 minutes on varoma speed 3

** i'm not really sure about cooking times ATM as i totally overcooked the wontons.

serve with rice noodles (soaked) and some of the broth, wontons and greens.

would be lovely with some chilli in it too

Noodle Poodle

what do you get when you cross stir fried noodles & veg with leftover hot dogs and need to make it appealing to the cranky 5yo who wants nuggets and chips??

Noodle Poodle of course!

fry julienned carrots and onions & garlic, add julienned capsicums and hot dog. drain noodles (soaked in boiling water to separate) and add. add some sesame oil and hoisin sauce, mix well and serve.

of course you can swap the hot dogs out with any kind of meat or tofu :)

i'm off to the gold coast at 6am tomorrow for a weekend that is childfree and girls only - can't wait! see you all next week ;)

Asian Noodle Salad

I think I've posted this one before but thought i'd post it again as it went down so well at the canberra eb chrissie do today (it's on the back of the noodle packet too) I've changed the way i make it a little from the original recipe - i'll put the original amounts in brackets...

1/2 - 1 chinese cabbage (wom buk) or savoy cabbage, shredded finely
6 green onions or 1/2 red onion - shallots - finely sliced (i usually use these but forgot to buy any )
100g roasted slivered almonds or pinenuts
1 pkt chang's fried noodles 100g (original or onion flavoured) www.changs.com
1/4 cup white vinegar
1/4 cup (1/2 cup) castor or brown sugar (actually i generally don't use this at all now, just lots more ketjap manis!)
1 tbspn ketjap manis - sweet soy sauce (1 tbspn changs soy sauce)
a few tbspns of sesame oil (2 tspns sesame oil, optional)
(1/2 cup olive oil - i don't put this in at all)

combine all dressing ingredient and stir until sugar is dissolved (i just shake in a jar)
mix all ingredients but the noodles. add the noodles and mix well just before serving.

you can add chicken or grilled sliced beef to this to make a meal in a bowl out of it.
