Wicked Chocolate Fondue
Ingredients
200 gram bar of Toblerone **
125ml cream
Honey (optional)
Liqueur of your choice (optional)
Things to dip with
Such as….
Banana
Strawberries
Pineapple
Any type of fruit that goes well with chocolate!
Musk sticks
Liquorice sticks
Marshmallows
Wafer biscuits
Method
1. Break chocolate into pieces and add cream in 1 litre microwave jug.
2. Cook uncovered for 2 minutes.
3. Stir with the Tupperchef spatula until well combined and smooth.
4. Add honey & liqueur to taste.
Serving suggestions
Pour chocolate fondue into the centre receptacle of the Alfresco serving centre and arrange your choice of dipping items in the compartments around the edge
Or
Pour mixture into 600ml illusions bowl. Place 600ml bowl in 2.4ltr platter and arrange your choice of dipping items around it!
Notes
• Condensation or water from anywhere will ruin your chocolate, so never put the lid on your 1 litre microwave jug while cooking chocolate as well as making sure everything is well dried!
• ** You can use other types of chocolate if you prefer such as dark or white or other flavours, just make sure you choose a good quality brand, not cooking chocolate.
• The fondue can be flavoured with any liquor you like
• Be creative with your dipping items
• If you can bear to wait, this is even nicer once it’s slightly cooled and thicker!

Lucus Cake
from a friend...
Lucus Cake
600mls thicken cream
1 packet of “morning coffee Biscuits”
I mug of water/ warm or cold
1tbl heaped of coffee
Cocoa
Flake
3 Sheets of foil
1 Packet of “white wings” Vanilla Instant Pudding
Put your 3 sheets foil down onto a tray ( make sure its long enough to put 7 biscuits across).
Mix with a mix master cream and pudding until its nice and fluffy and thick, while that is mixing dip your biscuits in the water and coffee, and place them down on foil 7across and 3 down so you should have 21 biscuits.
(that is 3 biscuits long, and 7 biscuits wide, so its a squarish shape)
Then spread half your pudding mix out on top of the biscuits.
Then repeat it all over again.
When you have the 2 layers get the sides of the foil and bring them together, to make a triangle.
Put in the fridge to set for 2 hrs.
Then with the left over coffee/ water use it for chocolate icing (however you would make your own chocolate icing), then sprinkle the top with a flake.

Thermomix Very Quick and Easy Creamy Sundried Tomato Sauce for Gnocchi
i couldn't be bothered starting from scratch with the pasta sauce (the 5 year old remember?) so i did a cheats version that was very nice:
4-5 sundried tomatoes
chop for 3-5 seconds on speed 4
add in one jar pasta sauce (we use aldi organic usually but this time i used the aldi olive one) and a little cream if you have some that needs to be used up, or leave out if you don't want it.
cook for 8 minutes on 80'c speed 2
pour over gnocchi, top with parmesan if desired.

a Thermomix dinner
with rain and cooler weather tonight (and a huge lunch out) geoff wanted to make soup for dinner, so i suggested he try Lexie's lentil soup, with some TM31 bread on the side. (well actually i suggested foccacia but he wasn't organised in time to make that)
the soup was very nice and the kids all had THREE serves each!!! wow!
it's very garlicky and otherwise very smooth and creamy tasting, you'd never know it's sort of healthy lol
i do love the TM31 bread. ok so it's not light and fluffy like foccacia but it's so quick and easy to make and it's got to be better for you! it's made with whole wheat which is ground up in the thermomix - hence the darker colour you can see in the photo above.
it's not sandwich bread, but great as a dinner accompaniment.

Pasta with Prosciutto & Peas
needing a quick dinner after work on monday i decided to give this a go, based on Celeste's recipe at Sugar and Spice. of course i made a few changes lol (and totally missed the bit about the lemon zest and juice, will have to try that next time!)
serves about 4-6
500g spiral pasta (spirals catch the sauce better :))
8-12 slices proscuitto
1 red onion, finely chopped
2 cloves garlic, finely chopped
freshly ground black pepper
1.5 cups baby peas, frozen
2-3 tspns cornflour
1 tin evaporated low fat milk **
parmesan
cook pasta according to packet directions
lightly fry the proscuitto, onion, garlic and pepper until proscuitto is crispy and onion and garlic are soft. *
add peas and gently fry, stirring occasionally, until peas are starting to soften.
add cornflour and mix well so everything is coated
add evaporated milk and cook until thickened, stirring most of the time.
immediately mix through pasta, top with parmesan to serve.
* actually you don't need to fry proscuitto as it does not require cooking, however i actaully had half proscuitto and half pancetta, which does require cooking ;)
** you can of course use cream like celeste, but i rarely have cream in teh house and get enough calories from other sources lol
