well, this is not a recipe (yet) as i didn't measure anything when i made it! next time i will write it up i promise!
however i just wanted to report in that I made this after a facebook friend gave me the link, and it was delish!!!!!
i reduced the amount of sugar to 2/3 cup (could possibly reduce to 1/2 cup) and used 2 apples.
basically i ground the chickpeas and added all the ingredients except the apples and mixed on speed 8 until smooth. then added the apples and chopped them on speed 5-6 until i couldn't hear any more big chunks in there.

Cranberry Cornmeal Pancakes
Using this recipe i made a nearly-core recipe for breakfast this morning. it was wayyyy too many cranberries though so i'll adjust that below :) i discovered at the last minute i was out of oranges so used a lemon which was good too.
rory absolutely loved them and ate more than me!!!
1 1/2 cups plain flour (or 1 cup flour and 1/2 cup processed oats)
1/2 cup polenta / cornmeal
2 tspns baking powder
2 tspns sugar (or splenda)
1/2 tspn bicarb soda
Pinch salt
2 eggs
juice of one small orange or one medium lemon
2 teaspoons finely grated orange / lemon zest, optional
1 cup skim milk
1/3-1/2 cup craisins
mix it all together!
spray a non-stick pan with cooking spray and heat over a medium-low heat.
put large spoonfuls in for pikelet sized pancakes. when they have mostly set and have bubbles on top flip to cook the other side.
I did have trouble working out the ww points for these because the recipe builder on the ww website works mostly in grams and i hadn't weighed anything. but the only non-core ingredients are the flour and craisins.

Apple & Passionfruit Shortcake
was going to make this today for people coming for motning tea, but ran out of time! will have to send g to bakers delight i think lol
APPLE AND PASSIONFRUIT SHORTCAKE
125g butter
1/2 cup castor sugar
1 egg
3/4 cup SR flour
3/4 cup plain flour
410g can pie apple
1 passionfruit
1 tspn finely grated lemon rind
extra castor sugar
Cream butter and sugar lightly, add egg, beat well. Beat in sifted flours. Turn out onto lightly floured surface, knead lightly until smooth, divide in half.
Roll each piece in a round between 2 sheets plastic food wrap or greaseproof paper to fit a 20cm round sandwich tin.
Place into greased tin which has base and sides lined with greased greaseproof paper. Press edges to fit in tin.
Break up apple roughly with spoon, add passionfruit and lemon rind. Spread over shortcake base leaving a small border around edge. Sprinkle with 1 tab extra castor sugar.
Place second round of pastry over fruit mix, press edges together around side of tin.
Brush with water, sprinkle lightly with sugar. Bake mod oven 35-40 mins. Allow to stand 15 mins before removing from tin.

Delicious Breakfast (Thermomix)
this recipe looked so delicious and i just had to try it for breakfast! of course i decided to put a LOT less sugar in it (especially for breakfast). i think this could be made with any variety of fruit :)
this amount made enough for rory and myself, i will update the amounts later when i work out quantities for one (i'm thinking 55g polenta but not completely sure how much milk would be needed)
3/4 cup blueberries, fresh or frozen
1 tspn maple syrup
70g polenta / cornmeal
470g skim milk
zest of one small lemon
pinch of salt
maple syrup to taste (about 1/2-1 tspn for me)
1/2 tspn vanilla essence
put the blueberries and 1 tspn of maple syrup in a microwave container, loosely cover, cook on high for 2 minutes. (i'm sure you could also do this in the thermomix, i just couldn't be bothered!)
place the polenta, milk, zest, and salt in the thermomix. Cook for 10 minutes on 90' speed 4 until the polenta is soft. add maple syrup and vanilla, mix on speed 2 until combined.
place polenta in bowl/s, top with blueberry mix, stir just a little and serve.
(warning - it will be VERY hot for quite a while!)

Cake for Mothers Day
I already gave mum her MD present earlier in teh week (a gift voucher for IPOD songs. i gave it already because i got her a bigger one because i realised i hadn't bought her birthday present yet - bad brazen!)
anyway, i thought i'd make her a cake for MD as a treat.
I just found this in my email so I'll either make this one or a carrot cake (but i'd have to buy cream cheese for the carrot cake)

Divine Berry Rice Pudding

just made this one tonight and it was absolutely delicious - so rich and yum!

i doubled the recipe as i have a 4l cooker, i think that doubling it would feed 8 maybe on its own, or more with icecream or cream or small serves? the recipe here is the doubled version.
1 tin condensed milk (i used lite)
1 tin evaporated milk (i used skim)
1 cup arborio rice
1/2 cup dried strawberries, chopped into 1/2's
1 tin dark cherries, drained
4 tablespoons ground almonds
1 teaspoon grated lemon zest
1 pinch salt
4 cups milk (i used skim)
4 eggs
mix everything except the cherries in a greased slow cooker dish. cook on high for approx 4 hours (i stirred several times) add the cherries in about 2 hours before end.
