This soup is our new fave, I am addicted to it! not only is it SUPER simple, it's super delicious too!!!
4 cloves of garlic, peeled
2 large heads of broccoli * roughly chopped
150g raw cashews or almonds
2 teaspoons stock concentrate (or 2 cubes)
water
place garlic in tmx bowl, chop 3-5 seconds or until it stops hitting the edges)
add broccoli, cashews, stock and enough water to nearly cover
cook for 20 minutes
puree on speed 8 (turn up gradually and carefully) for 25 seconds or up to 2 minutes
serve with toast or crusty bread
* if you don't have enough broccoli you can use cauliflower to make up the amount
