Apple Mustard Relish


from a recent New Idea magazine :)

APPLE MUSTARD RELISH

1 tspn oil
1 chopped onion
2 granny smith apples, peeled, cored and thinly sliced
1/4 cup water
1 tbspn wholegrain mustard
1 tbspn apple cider vinegar
1 1/2 tbspns brown sugar

sterilise jar.

heat vegetable oil in saucepan. add onion and cook, stirring occasionally, until soft. add apples and water. bring to boil. reduce heat and cover. boil gently over medium heat, stirring occasionally for about 10 mins or until apples are tender.

add mustard, apple cider vinegar and brown sugar. stir until sugar dissolves. season with salt and pepper.

pour into hot jar and seal while still hot.

ohh yum, that would go well with snags. Especially the Little Creek Cattle Company cornish snags.
