Chicken & Pumpkin Chilli (GF, TMX)

Yum! this was wayyyyyy nicer than i expected! will definitely make this again!

original recipe for Pumpkin Turkey Chilli

1 chicken breast, half frozen and cut into 1-2" cubes
1 garlic clove, peeled
1 onion, quartered
15g olive oil
1/2 green capsicum, cut into small dice *
1/2 red or yellow capsicum, , cut into small dice *
1 tin diced tomatoes
either around 400g tomato puree or 1 tin of water
1 tin drained kidney beans (around 400g)
4-500g diced pumpkin **
2 tspn ground cumin or cumin seeds
few sprinkles cayenne pepper
2 heaped tspns chicken stock concentrate

coriander to serve
grated tasty cheese to serve
sour cream to serve

place chicken in the thermomix and turn to closed lid. mince chicken using turbo button. when desired texture is reached place chicken in bowl and set aside (don't worry about cleaning out the bowl)

place garlic in bowl and chop speed 6 until it stops hitting the sides (around 5 secs). scrape down and place onion and oil in. cook for 2 minutes 100'c speed 5

add capsicum and cook for another 3 minutes 100'c reverse speed soft

add chicken and cook for 4 minutes varoma reverse speed soft

add in tomatoes and puree / water, beans, pumpkin, spices and stock concentrate. cook for 20 minutes 100' reverse speed 1

serve topped with coriander / cheese and cream as desired. we also had ours with steamed basmati rice and gluten free foccacia


* you could chop them in the thermomix, but i prefer the shape and texture of hand chopped capsicum
** i chopped the pumpkin to about 1-1.5cm dice. most of it cooked down, but some were left in chunks which was perfect :)
