no matter how health conscious you are trying to be extra-light cream cheese to make cream cheese frosting. it will be a DISASTER and way too runny to do anything with. even when you add an extra cup (or so) of icing sugar it will not thicken. It's only when you luckily discover an unopened in-date (what are the chances?!) pack of full fat cream cheese in teh back of the fridge that it will thicken enough to be used!!!
of course then you end up with twice as much as you need. hope it's still usable after freezing and defrosting :|
