well i'm very excited to announce that i didn't write this plan (not only the actual writing, which i hope it obviously not done by me lol, but the content). can you believe i only suggested two recipes for the whole thing?! woohoo!!! i only wrote the shopping list to go with it ;)

as you can see lots of soup on the menu - even though it's what is passing for summer around here still - i've realised that my kids LOVE soup, even vegetable soups, and don't care that it's hot. soup is healthy and easy. so i've been including lots of soup lately - though not this much lol

Tex Mex Cowboy Pie (GF)

based on another recipe from the friendly freezer group
500g potatos, peeled and cut into 4
1 small tub sour cream (low fat)
milk if needed
1 pound (500g) beef mince
1 jar mild salsa (GF if needed)
1 can corn kernels, drained
1 can mexibeans (GF if needed)
1/2 grated low fat cheese of your choice
heat oven to 200'
cook potatoes until soft then mash. add sour cream and mix well. add a little milk if needed to get a smooth but not runny mash.
fry mince until cooked. place in a large oven dish.
add salsa, corn and beans and mix well. top with potato, then sprinkle cheese over.
bake for 15 or so minutes until cheese is done to your liking and the dish bubbling around the edges

Chocolate Chip Peanut Butter Muffins

OMG i think i will have to buy some PB and try these - like a reeses muffin!!!
a recipe i found in 2003 on the 'friendly freezer' yahoo group
2/3 cup smooth peanut butter
2 tspn butter, melted
3/4 cup sugar (this sounds like a lot - it's an american recipe so probably safe to cut back)
2 eggs
1 1/2 tspn vanilla extract
1 1/2 cup SR flour
1/2 cup milk
6 oz (170g) chocolate chips
preheat oven to 350'F (180'c)
mix PB and butter until well blended. mix in sugar, eggs, vanilla
add flour, milk and choc chips, mix until just combined.
spoon into 12 lined muffin cups
bake 20-25 mins or until muffins spring back when lightly touched in centre

made these, gluten and dairy free - they are very yum and rora and i both love them! they are not like a reeses but good anyway. i used brown sugar and forgot to reduce the amount, but you definitely could.

just found a pile of old recipes. this one is merely some scribbles on the back of an envelope (stamped in 1990 lol) so i'm guessing how it goes...
375g dried cannelini or other white beans (?*)
2 tabs olive oil or butter
2 rashers of bacon, diced
2 cloves of garlic, crushed
2 onions, peeled & diced
1/2 bulb fennel, diced
oregano, dried or fresh
2-3 bay leaves
black pepper to taste
4 cups tomato couli (or a bottle of sugo / passata etc)
2 cups chardonnay
salt
chopped italian boiling sausages ** (GF if needed)
put beans in a bowl and cover with twice as much water as beans (ie: if beans come 1" up the bowl put 2" of water in). leave to soak for 1 hour
heat oil/butter in a large pot over medium-high heat. add bacon, garlic, onions, and fennel and cook, stirring, until onions & fennel are soft.
add oregano, bay leaves, pepper, drained beans, tomato couli, chardonnay and salt. turn to a high heat and cook until beans are done.
add sausages in and cook for 10 more minutes then serve.
* i'm pretty sure 1 hour of soaking would not be enough for this to be cooked, any thoughts?
