i don't think i can rave enough about how yummy these were!!! and so so easy. I'm thinking that they might even be good as a bigger wrap, as they seemed to roll quite well around some egg.

Recipe was from here and was very simple to convert both to gluten free and to thermomix.

Next time i'll double the mix though.

250g potatoes, cooked, cooled and peeled (i only cooled mine for about 5-10 mins after cutting them open into quarters) this is 2 small - medium potatoes
125g gluten free plain flour (or i used 30g brown rice flour, 40g tapioca starch and 45g maize flour)
½ tsp baking powder
good sprinkle salt
½ tsp pepper
30g butter
1/2 cup milk *
extra butter for frying

put potato in thermomix bowl, set dial to closed lid and pulse using turbo 2-3 times until there are no lumps of potato left, but you don't want glue!
add all other ingredients and pulse for 4-5 slightly longer times (2-3 secs instead of 1 lol) until it all comes together.

remove from tmx, knead lightly, roll into a ball, cut into 8 equal pieces. roll each piece into a ball then flatten between palms to get a nice round smooth shape.

melt a little butter in a pan and lightly fry 3-5 mins until golden brown in spots.

we had ours with poached eggs, and i also had rocket from our garden and diced avocado with mine. rora had hers just with butter YUM!


* PS: i have just seen in the recipe there was meant to be milk, i missed that (find it difficult to see everything when ingredients are all on one long line) so didn't use it, they were perfect without it so i'm not sure if i'd bother.

Last week I didn't even get around to taking my menu plan off my shopping list. as a result we didn't stick to it all that well! i can't remember much of what was on it, i know we had hamburgers on enight. we also tried West African Sweet Potato Soup which G&I really liked, and it was soooo easy - but unfortunately not one of the kids would eat it :(

our "Ready Steady Cook for Kids" arrived yesterday and the pictures and recipes got Ryan very excited! today he just had to make something...


I'm not sure if it's the book or him (he generally doesn't seem to have problems with recipes) he found this recipe format hard to follow. separating the ingredient list was confusing (especially when sultanas and icing sugar are not things we have in our pantry, but we always have carrots & didn't need to buy any) and each step had too many things in it. Also I think the font size was a little small for children.


however he really enjoyed making them and they were delicious,and only lasted about 30 minutes after making!

i was reminded this morning of this breakfast dish i used to make as a teenager, it's just a bit differet and very delicious! you can of course have it for any meal of the day, not just breakfast, and it's easy to make gluten free just by making sure all ingredients are GF :)

2 pieces toast of whatever kind suits you - wholegrain, sourdough, gluten free etc
1 tomato, sliced as thick as suits you, into enough slices to cover both pieces of toast
grated cheese to your taste
around 1/2 - 1 tspn mustard - i prefer seeded mustard, especially honey seeded, mmmm but dijon or american is also good
optional - 1/2 - 1 tspn butter
1 rasher of bacon, or 1-2 shortcuts of bacon, sliced into strips

place tomato on toast.

mix together cheese and mustard and butter if using and spread over tomato

top with bacon and grill until cheese is melted through and bacon is starting to crisp

yum!

and this afternoon i did some baking for the cake stall our school has on election day (it's a polling place and apparently the cake stall does a crazy business with all the voters!). all cakes were gluten free (half because i like providing that option and you can't really tell they're GF anyway and half because i'm too damn lazy to dig out the gluten flour and then do all the special cleaning up it requires afterwards):
  • apple tea cake (wasn't cooked in teh middle despite the skewer coming out clean :()
  • banana bread (burned despite being in the oven for less time than the recipe said, and at 20'c less, aagh, i hate my oven!)
  • caramel cake (the apple tea cake recipe minus apple etc and with brown sugar instead of raw)
  • strawberry cake (the apple teacake with strawberries instead of apples ;))
now i'm exhausted! lol

well we all survived my first week of work, though it was a house-full of tired, grumpy people by the end of the week! kids are not used to after school and before school care, or me used to sitting at a computer all day anymore!

Last week's menu may not have been the healthiest but it did the trick ;) we managed to cook every night til Thursday i think. I didn't make the masala dosa or pasta fagiole so will put them back on this week's menu...

Today we managed to get rid of both our boys so i decided it was a good day for a another visit to Master So - our local chinese restaurant, which has gluten free options (we hadn't managed to get back there since our last visit)


funnily Emelia was wearing her supergirl shirt again so the owner recognised us straight away and asked if I was the lady who wrote about them on my blog - so this is a big hello to her :D she is hoping to have their menu updated soon to make gluten free options easier to see


today we ordered lots (taking it home for dinner for geoff & i too ;)) and it was all utterly delicious, especially the yum cha... mmmm
