if anyone has a FABULOUS gluten free chicken nugget recipe please share, i am not having luck!
tonight am trying version 3, based on chat with a friend last week. have cut up the breast into chunks, used a meat mallet lightly, mixed in mayo (unfortunately not homemade) with a little paprika and turmeric, and then rolled in crushed GF cornflakes (which were rejected as breakfast cereal) and sprayed with a little rice bran oil. now baking... fingers crossed!
we are having with frozen chips (the aldi purple ones are GF) and i will probably do some steamed veg as i can't cope without veg LOL
update: these were the most successful so far! they tasted a little sweet to me (from the mayo no doubt) but not inedible, and emelia wasn't too keen, but everyone else loved them! they were all demolished ;)
next time i will have to try making my own mayo (not that i've had any success with it yet ;))

YUM! English Muffins (GF)

well, as you can see I haven't been blogging much and to be honest I haven't been cooking much either. only what I have to and not even a lot of that. first I had the 3+ months of sinusitis and then discovered I had 2 bad teeth and have started the process for root canal work (the lesson here is if you have ongoing sinus issues please ALSO have your teeth checked, just in case)
so anyway, this is one thing I did make recently. VERY yummy but not all that much like a 'real' gluten english muffin, i will make them again as we enjoyed them very much. I did do them in the thermomix but didn't write any method up yet. I will do that next time I make them :)
some tips: these are much nicer and easier made in silicone moulds rather than in traditional tins. if you need to use a tin greasing it will kind of 'fry' the outsides of the muffins :(
oh and the recipe!!! this one here :) i think you could safely reduce the sugar to at least half, if not one third of what the (american) recipe calls for.
Creamy Pasta Dish - kind of Boscaiola / Carbonara Cross (GF, TMX)

based on the recipe posted here
parmesan cheese, cut into 1cm cubes
around 6 shortcut pieces of bacon, cut into approx 1" pieces
4-5 mushrooms, or more if desired
1 packet (300g) San Remo gluten free spiral pasta
1 200g container sour cream
1 375g tin lite evaporated milk
1 tspn oregano
1 tspn chopped garlic (i had to use dried as i'm out of every other kind)
good sprinkle salt if desired
600-700g warm water *
2 eggs, lightly beaten
chopped parsley if desired
place parmesan in bowl, chop for 5-10 seconds on speed 10, place in bowl
place bacon and mushrooms in bowl, turn to closed lid, pulse on turbo once or twice until chopped
saute for 3 minutes on varoma speed soft
add all other ingredients except eggs and parsley
cook for 15 minutes at reverse 100' speed soft
remove measuring cup from lid, on reverse speed 3 or so pour eggs & parsley through lid.
place in thermoserver for 5 minutes before serving
no photo as it looked a bit like cat vomit LOL

it's such a stunning spring day here in Canberra today, it seems such a shame to "waste" it in the kitchen! but after doing the grocery shopping this morning I must cook this afternoon, as I need lots of things ready for tomorrow - which is not only Fathers Day but also the day my gorgeous big girl turns 5!!!! No party for her this year but we are having an afternoon tea at the park after preschool with 2 of her friends, plus of course she'll be wanting cupcakes to take to preschool to share... (whose idea was it to first start that tradition,i want to know?!) lol
so this afternoon i need to make:

- Fruit cake - for dad for fathers day
- Chocolate cake for Geoff
- Patty cakes for Emelia x around 30-40
- Strawberry Foam (had better get those strawberries washed and into the freezer!)
- Apple slice for mum (found a tin of apples in the pantry i need to use up), will use the patty cake recipe above for the base, unless i have a GF cake mix in the cupboard that is near its use by date...
