Finding out your child has coeliac disease is such a stressful thing, even though you know it is better than say, a diagnosis of cancer, or anaphylaxis, it's still awful to know that your child can never go anywhere and just eat what they want again in their life - not unless they want to be very very ill, immediately or in the future. even nearly 9 months after Rora's diagnosis, and even with how well we've all adapted, I feel like crying at knowing this is forever.

Rice Milk

I am attempting to be dairy free (not succeeding really, i love my dairy so much, plus i keep forgetting it is in foods such as pesto etc lol) and have switched to rice milk in preference to soy milk which I'd rather avoid in any quantity.

This milk is really nice - i do find it separates so isn't great for coffee (i drink it with a teaspoon now so i can keep stirring lol) but it is lovely for everything else :)

it's from Jo at Quirky Cooking who i MUST add to my blog list! (i keep saying that but i've been totally slack at updating my blog lately)

Rice Milk
50g brown rice
30g raw cashews
960g filtered water
1 tablespoon grapeseed (or other mild flavoured) oil
30g maple syrup
pinch of salt

Place rice in dry TM bowl and grind for 1 minute speed 8. Add cashews and grind until it stops hitting the sides (30-60 seconds)

Add remaining ingredients and cook at 60 degrees, 7 minutes, speed 4

Puree on speed 8 for 40 secs, then strain into jug (i have washed out an couple of old 2L milk bottles and use those). It will need a really good shake before each use!

Making a few changes from this recipe I made a delicious cake - even though I halved the sugar I still found it so sweet I'd call it a cake not a bread. Plus I"ll be tempted to put even less sugar in next time.

1 punnet (around 250g) hulled strawberries
490g gluten free plain flour *
1 tsp. bicarb soda
good pinch salt
2 tsp. ground cinnamon
2 tsp. vanilla essence
200g sugar (forgot to weigh this sorry, have guestimated)
4 eggs
200g grapeseed oil


place strawberries in thermomix bowl and chop gently on speed 4 for a few seconds. remove from bowl.

add all other ingredients and mix on speed 4 until just mixed. add strawberries and mix through on reverse speed 2-3 until mixed in without being chopped more.

bake at around 180' for 35-45 mins (i made 2 smallish loaves and mine were done in around 30-35 mins)

based on a recipe from the Thermomix Everyday book - which has a terrible error in my copy, do NOT use the bicarb in them! - these aren't as good as my fave cookies of all times, but are much quicker and easier ;) the times and speeds below are out of the everyday cookbook as well and I remember they weren't right but I didn't write down the correct ones - will do that next time and update!

100g raw cashews
250g softened butter *
150g raw sugar
10g vanilla essence
2 eggs
300g gluten free plain flour **
pinch salt
200g chocolate chips (or block chocolate in chunks - use tmx turbo)

preheat oven to 190'c

place nuts in tmx bowl, chop on speed 4 until lightly chopped (maybe 3-5 seconds?)

add butter and melt for 30 seconds at 50'c on speed 3 (* my butter was straight from the fridge so I melted it for around 80 seconds)

add sugar and vanilla and mix for 20 seconds on speed 3

add eggs and beat on speed 3 gradually adding dry ingredients for up to 30 seconds.

add choc bits and mix for 10 seconds on reverse + speed soft (i think i had to use speed 3 or so to mix here)

drop teaspoonfuls onto trays and bake 10-12 mins

based on the Apple Tea Cake recipe this is SO quick and easy and the kids loved it!


Butter (60g)
Milk (200g)
Egg (1)
Vanilla Essence (half teaspoon)
Gluten free plain flour * (190g)
gluten free baking powder * 2 tspns
Raw Sugar (100g)
Pinch Salt
1 tablespoon Cocoa

Preheat oven to moderate and grease your cake tin (I made patty cakes, the traditional sort ;))

Melt butter in tmx bowl for 2 mins, 90 degrees, speed 1.

Add milk, vanilla essence and egg. Mix for 5 seconds on speed 7.

Add flour, baking powder, cocoa, sugar and salt. Mix for 10 seconds, speed 5.

Tip half batter into tin and bake for 30-35 minutes. (patty cakes took about 15 mins)

Last week I made this cake for my parents and as i managed to snaffle a piece i will say it was delicious!!!! i did make some minor changes to the original recipe - including being gluten free. it was soooooo moist and just beautiful, and i am not a tea cake lover! Mum also raved about it - so give it a try!


Butter (60g)
Milk (200g)
Egg (1)
Vanilla Essence (half teaspoon)
Gluten free plain flour * (190g)
gluten free baking powder * 2 tspns
Raw Sugar (100g)
Pinch Salt
4-6 small - medium golden delicious apples, cored and cut into 8 pieces
Cinnamon and sugar extra

Preheat oven to moderate and grease your cake tin

Place apple in tmx bowl and chop for 10-20 seconds speed 4. remove from bowl, mix with extra cinnamon and sugar and set aside.

Melt butter in tmx bowl for 2 mins, 90 degrees, speed 1.

Add milk, vanilla essence and egg. Mix for 5 seconds on speed 7.

Add flour, baking powder, sugar and salt. Mix for 10 seconds, speed 5.

Tip half batter into tin and sprinkle half the apple mix across the cake. pour the remaining batter over and give it a gentle stir with a knife. Place the remaining apple mix evenly over the cake.

Bake for 30-35 minutes.

Rora loved her gluten doughnuts but hadn't had one since last December. When i heard the donut machines were available in Kmart at the moment for $25 I had to go and get one. we tried it tonight and I'm so glad we have it! The donuts are sooooo yummy and of course it won't take long to pay for it with the savings from making our own :)

I used this recipe which was very nice (maybe a tad sweet) and converted to thermomix...


Gluten Free Donuts for a Donut Machine

180g sugar or raw sugar
125g butter, cubed
180g milk
1 egg
230g gluten free flour *
1 1/2 tspns GF baking powder *
2-3 tspns ground cinnamon

grind sugar to caster sugar fineness (speed 8)

place butter in TMX bowl, melt for 1-3 mins (depending on temp of butter) at 70'c speed 1
add milk and egg and mix at speed 3 for 10 seconds or until well mixed
add flour, 100g of the sugar and baking powder and mix at speed 4 for 10 seconds or until well mixed.

Mix the other 80g of sugar with cinnamon in a bowl and set aside

use a soup spoon to pour the batter into your mini donut maker (spray well with spray oil before each batch)

as each batch is cooked toss them in cinnamon sugar and serve :)

note: this recipe made approx 32 mini donuts

thermomix news!!!!

I am finally succumbing and am going to sell the thermomix!! I will be doing training at the end of July and will be available for demonstrations in Canberra and area from August on (i think, possibly October) - so if you'd like to see it, with no pressure to buy, please contact me on khedleytw at gmail.com :)

I know I shouldn't complain

when in Australia it is so much easier to find gluten free food out and about, but when you are visiting another city and arenot familiar with what is where it can be quite tricky to find suitable GF food, particularly when you factor theage of the GF person into the equation ;) even providing from the supermarket can be tricky when you're in an area that is not so affluent or knowledgable.

today we had to go with Muffin Break for a snack - we usually avoid MB because it simply costs our family of 5 far too much money (the muffins are $4 or maybe a ltitle more each and then when you add drinks on top...) but at least we knew the kids would eat it. well actually, ryan didn't but that's another story lol

tommorrow we are havingl unch with friends and i have bought to take, GF sausages from coles (the little ones, i forget what they call them), corn on the cob, jelly and custard, and this risotto http://brazen20au.blogspot.com/2008/04/brazens-oven-baked-pumpkin-risotto-2.html (sorry for no link, i can't work out how to do it on this silly mac!) it's hard cooking out of your own kitchen - we were going to bring the thermomix with us but just forgot to get it organised... bah lol

well the clementine cake might have been a disaster but this Macadamia and Mandarin Fudge sure wasn't!!! and soooo easy too... my guests loved it!

based on Chelsea's recipe here, i subbed my clementine for the limes, and added some orange essence.

150g toasted macadamia nuts
zest of one large clementine mandarin, scrubbed well
395g can condensed milk
500g white chocolate
1/2 - 1 tspn orange essence


Line a 18cm square tin with a piece of baking paper (so that the paper comes up the sides).
Place nuts in bowl and chop using turbo. set aside
Place the zest in the bowl and grate finely (10 seconds, speed 8 ). Set aside.
Place the chocolate in the bowl and grate (5 seconds, speed 8 ).
Add condensed milk to the chocolate and melt/combine (approx. 5-7 minutes, 50 degrees, speed 1). Check often and stop when fully melted. I found i had to stir with a spatula as it was a bit thick for the thermomix to stir evenly.
Add zest, essence and chopped nuts and combine (approx. 30 seconds, speed 1).
Tip into tray and refrigerate until set. Cut into squares and keep in fridge.

Lesson learned...

I make my Whole Orange Cake as often using lemons as I do using oranges, so this time I decided it would be great made with mandarins - i much prefer eating mandarins! so i bought some nice large clementines (I think, the firm ones) and used them this afternoon. Only to end up with a cake that was just too bitter - yes, even with all that sugar in it. none of us liked it. Not to mention it was much more fiddly getting the mandarins ready (they were full of tough white membranes I had to cut out, as well as heaps of seeds. so lesson learned, mandarins are OUT!
